Guilt-free cake pops.. Perfect for the toddlers..

Oh boy.. I don't talk about my day-to-day very much in my professional life but I have to say today, today was a struggle. Not sure if it's the heat or because I didn't get my son to let some steam off by a huge run around but he was CRAZY!! Just out of control crazy. I've never experienced such a crazy kid before.. I was one of those mums today at the shops that had to drag my 3 year from the ground to the car because he was having a non stop hissy fit. And that was just a sneak peak of how my day unfolded. He didn't want his nap, he only wanted to say "mum, mum, mum" every step I moved. ahhhhhhh. So all I could do was breathe and make some goodie kiddy guilt free cake pops with him..

So store this recipe away for a rainy day when your child is driving you batty! It amused us for a good 45 minutes.. That's a lot in toddler time! he he he.. Plus it's super healthy and they love it! Lots of fun!

GUILT FREE TODDLER CAKE POPS - makes around 20

Equipment

Lollipop sticks
Cake pop stand
Food processor

Ingredients

1 1/2 cups of nuts (we used almonds, cashews and walnuts
1/2 cup shredded coconut
1/4 cup raw cacao powder
10 medjool dates
1 ts vanilla paste
1 tb maple syrup
1 tb coconut nectar (if you don't have this just put more maple syrup)
1 ts water

How to:

Step 1. Place all nuts in a food processor and combine until it's a fine crumb.

Step 2. Add the rest of the ingredients and mix until its combined like cookie dough.

Step 3. Wrap mixture in cling wrap and place in the freezer for 15 minutes.

Step 4. Grab small bits of dough and roll into balls. Repeat till finished.

5. Stick lollipop stick 3/4 in. Keep in fridge.

Will last up to 5 days refrigerated.
